The first three pages offer detailed instructions for making lye, ammonia, and vinegar, complete with 3 illustrations. This is followed by 268 pages of recipes in a tidy, consistent hand, all apparently written out at once. Many are distinctively Mexican, such as pollo oaxaqueños (page 67) and carne abodaba (page 198). This section is dated "Mexico 1875" on page 268. These recipes are each keyed with a page number in parentheses, apparently referring to another version of the cookbook; the numbers and text do not match any published cookbook we have traced. Several pages were apparently written after 1875. The first Mexican edition of the famous cookbook by French chef Jules Gouffé, which was published in 1893, is mentioned on the 3rd preliminary page; 4 recipes dictated by Aurora Herrera Suarez in 1915 are recorded on page 270.
