first edition, although one chapter on serving techniques and the two plates had appeared in 1826 as the rare pamphlet "Arte de trinchar y servir las viandas" (see Swann's 6 November 2014 sale, lot 464). It is rich in New World ingredients and Mexican preparations. Printed over the first plate in this copy is a small early chromolithograph of a soldier. How or why this occurred is inexplicable, and has baffled the best minds of Swann; perhaps it was done as a puzzle for the curious bibliophiles of the future.
