This manuscript cookbook is written in the form of a textbook, with a long introduction and a list of standard terms. It may have been produced as coursework for a culinary program; it is signed several times "10 / C. Cenillo" in red, suggesting that those portions had been graded by an instructor (leaves 7, 14, 56, 79, 134). Among the numerous Mexican recipes are "Huachinango en salsa de jitomate" (leaf 32), "Chiles rellenos en escabeche" (37), enchiladas (38), "mole de guajolote" (41-42), "tostadas tapatias" (42-43), "chayotes a la hortelana" (67-68), "pastelitos Republicanos" (90), and "atole de fresa" (104). The front pastedown is inscribed "Cuaderno de cocina, Ernestina M." on 18 February 1898, and page 105 is titled "Cocina 2° año, Ernestina M. Valdes, Julio 1899." However, the volume also bears the stationer's advertising tag, which is dated 1916.
