first edition (not reprinted until 1992). Believed to be only the second cookbook published in Mexico outside the capital. Some items are distinctly Mexican, including several mole recipes from pages 190 to 196. Many of the other recipes originated in the Madrid periodical La Risa, and the preface was by Spanish novelist Wenceslao Ayguals de Izco, who also apparently wrote the conclusion under the pseudonym Abundio Estofado. While a portion of the illustrations and text are humorous, this was a serious cookbook. Cagle, Matter of Taste 1201 (calls for only 8 plates).
