Additional Details

Among the many distinctively Mexican recipes are "pipian de pepitas de melon," "tortillas de chile verde," and "chiles reyenos de picadillo." These recipes do not seem to be transcribed from a published source. The paper bears the watermark "M Picardo" and a coat of arms over the letters "A G"; other examples of this paper have been dated circa 1825. The first published Mexican cookbook did not appear until 1831.
