Jacques-Fabien Gautier d'Agoty and his sons refined the color mezzotint technique invented by Jacob Christoph Le Blon and employed it primarily for the depiction of anatomical subjects. The last large-scale examples by a member of the family were the illustrations for Nicolas Jadelot's 1773 anatomical atlas by Arnauld-Éloi, second son of Jacques-Fabien.
