The paper in the shorter volume bears an "1833" watermark, but some of the recipes in both volumes seem to be transcribed from printed Mexican cookbooks of the 1840s. For example, the recipe for "guajolote en pipian verde" in the longer volume comes from the 1841 Nueva Cocinera Mexicana (above).
